What’s Cookin’ Wednesday – Chili

Chili is a staple in our house during the winter months. It’s so easy and can be whipped up on a time crunch. My favorite vegetarian chili recipe is so simple it’s scary!
Ingredients:
2 caps black beans drained and rinsed
1 can chili beans drained and rinsed
1 can pinto beans drained and rinsed
½ cup quiona
1 cup onion
1 cup green pepper
1 can diced tomatoes (2 if you really like tomatoes)
2 cans tomato sauce
1 cup meatless meat crumbles
½ cup vegetable broth
1 package of chili seasoning (your preference)
*Optional toppings: cheese, crackers, chips
Directions:
Prepare the canned beans by draining and rinsing them.
Cut up onion and green pepper (unless using frozen).
Put all ingredients into a large pot and cook for 25-30 minutes on low to medium heat.
Be sure to stir frequently to ensure it doesn’t burn.
Serve and top with your favorite chili toppings!
