What’s Cookin’ Wednesday – Homemade Protein Bars

I’ve been trying to incorporate more protein into my diet to help support the growth of baby boy. Being plant-based it’s been challenging to find higher protein sources that don’t include meat or dairy so I explored some protein bar options for an afternoon snack. After doing a lot of research I found that SO many protein bars contain a lot of sugars and other ingredients that our bodies just don’t need! So I found a homemade protein bar recipe that is super simple and is equally delicious! I do love Beachbody’s Beachbar (linked here) and I still place an order for these every other month, but they can be pricey so I opted for these homemade ones too!
Ingredients:

-1 ½ cups dry rolled oats
- ½ cup all natural peanut butter
- ½ cup all natural honey
- ½ cup raisins
- 1 cup vanilla protein powder (I use vanilla shakeology – linked here)
- ½ cup almonds (chopped with food processor)
- 2 tbsp chia seeds
- ½ to 1 cup unsweetened vanilla almond milk (or as much as needed for consistency of bars)
- 1 tbsp cinnamon
Directions:
-Chop the almonds using the food processor until there are no large chunks left
-Mix all of the ingredients together in a medium sized bowl adding the milk to help coat all of the ingredients
-Make sure that everything is equally coated and mixed well
-Put in a small pan (or I just use aluminum foil) and flatten it out to make a square.
-Cut into rectangles for a total of 8 bars
