What’s Cookin’ Wednesday – Spinach Cream Pasta
This was one that I found, made some modifications to it, and was so shocked with how it turned out! Super simple and quick dinner that’s packed with protein and delicious!
Ingredients:
Pasta:
-2 cups red lentil pasta
-1 bag frozen peas
-1/2 bag Quorn meatless pieces
Sauce:
-2 cups spinach
-1 tbl olive oil
-3 cloves of garlic
-1/4 cup nutritional yeast
-1 can lite coconut milk
-pink salt (to taste)
-pepper (to taste)
Directions:
-In a food processor combine all of the sauce ingredients until smooth
-Cook pasta according to package directions
-Place peas in a strainer and run warm water over them to help thaw (or if in a steamer bag, steam them in microwave)
-Add the sauce into a skillet on medium heat.
-Add meatless pieces and peas to sauce and cook for 5 minutes
-Once pasta is fully cooked add to skillet with sauce and meatless pieces and cook for additional 5 minutes
